First you cut the cabbage lengthwise into small pieces and place it in a large bowl. Then you sprinkle salt over it and massage the cabbage with your hands to soften it a bit. Add water to it and let it stand for 1-2 hours. After you let it stand, rinse the cabbage thoroughly under cold water. Now take all the other ingredients, mix them and make a paste out of them. Squeeze the cabbage dry and mix it with the spicy paste. Take a jar and put the cabbage in it. Let the cabbage ferment between 1-5 days and keep it in a cool room temperature. All you need for this recipe are1 tablespoon extra-virgin olive oil, 1 cup chopped yellow onions, 3 garlic cloves, smashed, 2 heaping cups chopped carrots,1Â½teaspoons grated fresh ginger, 1 tablespoon apple cider vinegar, 3 to 4 cups vegetable broth, Sea salt and fresh black pepper, 1 teaspoon maple syrup, or to taste (optional), coconut milk for garnish. First you need to heat the olive oil in a large pot over medium heat. Add the onions and cook it about 8 minutes while adding salt and pepper. Add the smashed galic as well as the carrots to the pot and cook it for another 10 minutes. Add the ginger and the apple cider vinegar and mix everything up with 4 cups of broth. Let everything cook about 30 minutes and once its soft put everything in a blender. If you want you can serve it with a topping of pesto or dollop.
